Prep chiles
Heat a large dry skillet over medium heat. Toast the whole dried chiles (both New Mexico/guajillo and ancho) for 15–30 seconds per side until fragrant but not burned. Remove and let cool slightly. Using scissors or a knife, cut each chile open and shake out seeds and ribs. Wipe interior gently with a paper towel if needed.

Soak chiles
Place the toasted, seeded chile pieces in a heatproof bowl and pour 1 cup very hot water over them. Let soak for 20 minutes until softened. Reserve the soaking liquid.

Blend sauce
Transfer the softened chiles (reserve 1/2 cup of the soaking liquid), sautéed onion and garlic to a blender. Add 1/2 cup of the vegetable or chicken stock, the reserved 1/2 cup soaking liquid (or more stock if needed), cumin, oregano, coriander, smoked paprika (if using), apple cider vinegar, and 1 teaspoon salt plus black pepper. Blend on high until completely smooth, adding more stock by tablespoons if too thick. The finished puree should be pourable but slightly thick (like a heavy cream consistency).

Simmer and finish
Return the blended chile mixture to the saucepan and bring to a gentle simmer over medium-low heat. Cook, stirring occasionally, for 12–15 minutes to develop flavor and remove any raw taste. Taste and adjust seasoning: add up to 1/2–1 teaspoon more salt if needed and a splash more vinegar if it needs brightness. If the sauce is too acidic, simmer a few minutes longer; if too thick, thin with additional stock (1–2 tablespoons at a time).

Strain (optional)
For a very smooth, restaurant-style red chile, pass the simmered sauce through a fine-mesh sieve into a clean saucepan or bowl, pressing solids with the back of a spoon. Return to heat briefly to keep warm.
To Serve / Garnish

Spoon the warm red chile into a small serving bowl or pour over warm rice, potatoes, enchiladas, breakfast hash, or use as a dipping sauce. Sprinkle with chopped cilantro and crumbled queso fresco or cotija if desired. Serve lime wedges on the side to brighten the sauce.

Store any leftover chile in an airtight container in the refrigerator for up to 5 days or freeze in portions for up to 3 months. Reheat gently on the stove with a splash of stock to loosen, stirring frequently.
