Heat the milk
Pour 4 cups whole milk into a small saucepan. Place the saucepan over medium-low heat.

Stir gently and continuously with a wooden spoon or heatproof spatula to prevent a skin forming and to avoid scalding. Heat until small bubbles begin to form around the edges and steam rises, about 6–8 minutes. If using a thermometer, aim for 150–160°F (65–71°C) for warm pasteurized milk; do not boil.

Taste and adjust: sample a small spoonful and add more sweetener or a pinch more salt to taste.

Serve or store
Serve the warm milk immediately in cups, or let cool to room temperature and refrigerate in a sealed container for up to 3 days. Reheat gently over low heat, stirring, until warm.

If using a thermometer, insert it into the milk without touching the pan bottom to get an accurate reading. Clean equipment after use with warm soapy water.
