Quesadilla filling

Method

Prepare vegetables

    Wash and slice

    Wash the yellow squash, zucchini, broccoli, and mushrooms. Trim ends. Thinly slice the yellow squash and zucchini into rounds about 1/8-inch thick. Cut broccoli into very small florets (or chop finely) so they cook quickly. Thinly slice mushrooms.

    Cook gently

    Heat 1 tablespoon oil in a nonstick skillet over medium heat. Add the sliced yellow squash, zucchini, broccoli pieces, and mushrooms. Sprinkle with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Sauté, stirring occasionally, for 3–4 minutes until vegetables are softened but not mushy. Remove vegetables to a plate and spread them in a single layer to cool slightly (this prevents excess moisture in the quesadilla).

Assemble and cook quesadillas

    Heat pan

    Wipe the skillet clean and return to medium-low heat. Add 1 teaspoon butter or a light coating of cooking spray and swirl to coat the pan.

    Assemble

    Lay one tortilla flat. Sprinkle 1/4 cup shredded cheddar and 1/4 cup Monterey Jack evenly over half of the tortilla. Add about 2 tablespoons of the cooked vegetable mixture on top of the cheese, spreading it so it stays away from the edges (reserve any extra vegetables for other quesadillas). Fold the empty half of the tortilla over the filling to form a half-moon. Repeat for the remaining tortillas, cheeses, and vegetables (you should make 4 quesadillas).

    Cook quesadillas

    Place the folded quesadilla in the warm pan. Cook 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden-brown and the cheese is melted. If the quesadilla browns too quickly before the cheese melts, lower the heat slightly and cover the pan for 30–60 seconds to help melting.

    Finish and keep warm

    Transfer cooked quesadillas to a cutting board and let rest 1 minute. Repeat cooking with remaining quesadillas, adding more butter or spray as needed. Slice each quesadilla into 3 wedges for easy kid-sized portions.

Serve

    Serve warm with optional mild salsa and Greek yogurt or sour cream for dipping. Garnish with chopped cilantro if desired. Encourage children to dip or eat as finger food.

    Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat for 2–3 minutes per side or in a toaster oven until warmed and crisp.
