Kid's Pinto Bean Burrito Recipe

Method

Burrito filling

    Prep onion

    Finely chop the half onion until you have about 1/2 cup chopped. This size is mild and mixes well for kids.

    Heat a medium nonstick skillet over medium heat. Add 1 teaspoon oil or a light spray to the pan if not nonstick.

    Add the chopped onion to the skillet and cook, stirring occasionally, until soft and translucent, about 3–4 minutes.

    Add the cooked pinto beans to the skillet with the onion. Use the back of a wooden spoon or a potato masher to gently mash about half the beans so the filling is creamy but still has texture (this helps the burrito hold together for kids).

    Stir in the salsa, ground cumin, garlic powder, salt, and black pepper. Cook gently for 2–3 minutes until heated through and flavors meld. Taste and adjust salt very slightly if needed. Remove from heat.

Assembly

    Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

    Warm the flour tortillas for 10–15 seconds each in the microwave (stacked and covered with a damp paper towel) or warm briefly in a dry skillet. Warm tortillas are easier to roll without tearing.

    Lay one warm tortilla flat. Spoon about 1/2 cup of the pinto bean mixture down the center of the tortilla in a line. Top with about 3/8 cup (roughly 3 tablespoons) of shredded cheddar cheese. Repeat for remaining tortillas. (For 4 tortillas you will use all the filling.)

    Fold the sides of the tortilla over the filling, then roll from the bottom to form a burrito. Place seam-side down on the prepared baking sheet. Repeat with remaining tortillas.

    Lightly brush the tops of the burritos with the melted butter or brush with a little oil to help them brown gently.

    Bake in the preheated oven for 10–12 minutes, until the tortillas are lightly golden and the cheese inside is melted. If you prefer a softer tortilla, reduce bake time by 2–3 minutes.

    Remove from oven and let cool 2 minutes before serving so the filling is not too hot for kids.

Optional toppings & serving

    Serve each burrito with a small dollop of sour cream, a spoonful of mild diced tomatoes, and a light sprinkle of chopped cilantro if using. You can also slice the burritos in half for easier handling.

    Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 8–10 minutes or microwave covered until warmed through.
