Pinto Beans

Method

Pinto Beans

  1. 1

    Prepare and heat

If using canned pinto beans, drain and rinse them lightly. Place 1 cup of cooked pinto beans in a small saucepan or microwave-safe bowl.

  2. 2

Add 2 tablespoons of water or low-sodium broth to the beans to loosen them and prevent sticking. Add 1 teaspoon of butter or olive oil, 1 teaspoon salt, and 1/8 teaspoon black pepper. If you want a hint of mild flavor, add 1 teaspoon mild chili powder (optional).

  3. 3

Stovetop method: Heat over medium-low, gently mashing some of the beans with the back of a spoon to reach a slightly creamy consistency, stirring frequently, for 4–6 minutes until hot. Microwave method: Cover the bowl loosely and microwave on high for 60–90 seconds, then stir and mash slightly; microwave another 20–30 seconds if needed until hot.

  4. 4

Taste and adjust seasoning lightly for a kid-friendly flavor (reduce salt or chili powder if needed). Keep the beans warm while preparing the tortilla and cheese topping.

Topping

  1. 5

Place the warmed beans in a small cup or kid-sized bowl. Sprinkle 1/4 cup shredded mild cheddar cheese evenly over the hot beans so it begins to melt. If you prefer fully melted cheese, place the bowl under a broiler for 15–30 seconds or microwave for 10–15 seconds—watch carefully to avoid overheating.

Side - Tortilla

  1. 6

Warm the flour tortilla: heat a dry skillet over medium for about 20–30 seconds per side until soft and slightly puffed, or microwave the tortilla wrapped in a damp paper towel for 15–20 seconds. If desired, lightly brush or rub 1/2 teaspoon butter on the warm tortilla.

  2. 7

Serve the warm tortilla on the side for dipping or scooping the cheesy pinto beans. Present the beans in the cup with the melted cheese on top and the tortilla folded beside it.
