Quesadilla filling

Prepare chicken and veggies
If using leftover or rotisserie chicken, shred or finely chop until small pieces. If using raw chicken breast, cook thoroughly (poach, bake, or sauté) until internal temperature reaches 165°F / 74°C, then shred. Finely dice the red bell pepper and chop the green onion.

Mix filling
In a medium bowl, combine 1 cup cooked shredded chicken, 1/2 cup shredded mild cheddar, 1/2 cup shredded Monterey Jack, 1/4 cup diced red bell pepper (optional), and 1 tablespoon chopped green onion (optional). Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Stir until evenly combined. The cheese will help bind the filling when warmed.
Assembling & cooking

Heat skillet
Place a nonstick or cast-iron skillet over medium-low to medium heat. Add 1/2 tablespoon butter or 1/2 teaspoon oil to the skillet and swirl to coat. Use a lower heat so the tortilla crisps without burning while the cheese melts.

Assemble quesadilla
Lay one small flour tortilla flat on a plate or clean surface. Spoon about 1/4 of the chicken-and-cheese mixture onto one half of the tortilla, spreading it into an even layer but keeping it about 1/4 inch from the edge. Fold the other half of the tortilla over the filling to form a half-moon. Repeat to assemble remaining tortillas (you can cook one at a time or two if your skillet is large).

Cook first side
Transfer the folded quesadilla to the preheated skillet. Cook for 2 to 3 minutes, pressing gently with a spatula, until the bottom is golden brown and crisp and the cheese inside begins to melt.

Flip and cook second side
Carefully flip the quesadilla with a spatula and cook the other side 1.5 to 3 minutes until golden brown and the cheese is fully melted. If the tortilla browns too quickly before the cheese melts, lower the heat and cover the skillet for 30–60 seconds to trap heat and speed melting.

Repeat
Transfer cooked quesadilla to a cutting board and wipe the skillet lightly if needed. Add remaining 1/2 tablespoon butter or oil and cook the remaining quesadillas the same way.

Slice for kids
Let each quesadilla rest 1 minute, then use a sharp knife or pizza cutter to slice each half-moon into 2 or 3 wedges (for small hands choose 3 wedges). Arrange on a plate.

Serve warm with 1/2 cup sour cream, 1/2 cup mild salsa, and optional 1/2 cup avocado slices or guacamole. For younger children, offer the sour cream or guacamole on the side for dipping.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or in an oven at 350°F (175°C) until warmed through and cheese is melty.
