    Prepare cheese

    Combine the shredded cheddar and Monterey Jack in a small bowl and gently mix so the cheeses are evenly distributed.

    Heat skillet

    Place a nonstick skillet or cast-iron pan over medium-low heat. Add the butter and oil and let the butter melt completely but do not let it brown (about 30–45 seconds). The oil helps prevent the butter from burning.

    Assemble quesadilla

    Lay one tortilla flat on a plate or cutting board. Sprinkle half of the cheese mixture (about 3/4 cup total) evenly over the tortilla, leaving a 1/2-inch border. Lightly sprinkle the salt over the cheese. Top with the second tortilla and press gently to adhere.

    Cook first side

    Carefully transfer the assembled quesadilla to the preheated skillet. Cook for 1.5–2 minutes, until the bottom tortilla is lightly golden and the cheese begins to melt. Keep the heat at medium-low so the cheese melts before the tortilla over-browns.

    Flip and finish

    Using a wide spatula, carefully flip the quesadilla. Cook the other side for another 1.5–2 minutes until golden brown and the cheese is fully melted. If the tortilla is browning too quickly before the cheese melts, reduce heat slightly and cover the pan for 30–45 seconds to trap heat and finish melting.

    Rest and cut

    Transfer the cooked quesadilla to a cutting board and let it rest 1 minute (this helps the cheese set slightly). Using a pizza cutter or sharp knife, cut the quesadilla into 4 wedges for easy kid-friendly portions.

    Serve

    Serve warm with optional mild salsa and/or sour cream for dipping. Allow the quesadilla to cool slightly before giving to small children to avoid burns.
