Prepare the Plantains
Peel the green plantains by cutting off the ends and making a lengthwise slit along the skin. Remove the skin carefully.

Slice the Plantains
Cut the peeled plantains into 1-inch thick slices.

Fry the Plantains (First Fry)
Heat the vegetable oil in a large skillet over medium heat. Once hot, add the plantain slices and fry for about 3-4 minutes on each side until they turn golden but not fully cooked.

Flatten the Plantains
Remove the fried plantains from the oil and place them on a cutting board. Use the bottom of a heavy glass or a tostonera to flatten each slice to about 1/2 inch thick.

Fry Again (Second Fry)
Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes on each side until they are crispy and golden brown. Remove and drain on paper towels.

Season with Salt
Sprinkle the fried tostones with salt while they are still hot.
Mojo Aioli

Prepare the Garlic
Mince the garlic cloves finely or use a garlic press to crush them.

Mix the Ingredients
In a bowl, combine the mayonnaise, minced garlic, fresh lime juice, chopped cilantro, cumin, and salt. Mix well until all ingredients are fully incorporated.

Adjust Seasoning
Taste the aioli and adjust the salt if necessary.

Chill
Refrigerate the mojo aioli for at least 30 minutes before serving to let the flavors meld.
