Dough Preparation
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour and salt.
Add Butter
Cut in the unsalted butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add Water
Gradually add water, mixing until the dough comes together. You may not need all the water.
Knead and Rest
Turn the dough onto a floured surface and knead for about 2-3 minutes. Wrap in plastic wrap and let it rest in the fridge for at least 30 minutes.
Filling Preparation
Cook Spinach
Add fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper. Remove from heat and let cool.
Add Cheese
Once the spinach mixture has cooled, stir in the mozzarella cheese until well combined.
Assembling and Baking Empanadas
Preheat Oven
Preheat your oven to 375°F (190°C).
Roll Out Dough
On a floured surface, roll out the rested dough to about 1/8-inch thickness. Use a round cutter to cut out circles, about 4-5 inches in diameter.
Fill Empanadas
Place a tablespoon of the spinach filling in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
Egg Wash
Beat the egg in a small bowl and brush it over the top of each empanada for a golden finish.
Bake Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
