Method

Prepare the Spice Rub

    Mix the Spices

    In a medium bowl, combine brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.

Prepare the Ribs

    Apply the Rub

    Pat the pork spare ribs dry with paper towels. Generously rub the spice mixture all over the ribs, ensuring they are evenly coated. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours or overnight for best results.

Cook the Ribs

    Preheat the Grill

    Preheat your grill to medium-high heat (about 350°F to 400°F).

    Grill the Ribs

    Remove the ribs from the refrigerator and unwrap. Place the ribs on the grill, bone side down. Cover the grill and cook for about 1.5 to 2 hours, turning occasionally, until the ribs are tender and cooked through.

    Apply BBQ Sauce

    During the last 30 minutes of cooking, brush the guava BBQ sauce onto the ribs, flipping and coating both sides. Continue cooking until the sauce is caramelized and slightly sticky.

    Cut the Potatoes

    Wash and peel the potatoes. Cut them into even strips, about 1/4 inch thick.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F.

    Carefully add the potato strips to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
