Preparation of Sofrito

    Heat the Oil

    In a large pot, heat the olive oil over medium heat until shimmering.

    Sauté Vegetables

    Add the chopped onion and bell pepper to the pot. Sauté for about 5 minutes until they become soft.

    Add Garlic and Tomato

    Stir in the minced garlic and diced tomatoes. Cook for an additional 3-4 minutes until the tomatoes break down.

    Add Cilantro and Lemon Juice

    Mix in the chopped cilantro and lemon juice, cooking for another minute. Remove the sofrito from the heat and set aside.

Cooking the Sopa de Mariscos

    Combine Ingredients

    In the same pot, add the fish stock and bring it to a simmer over medium heat.

    Season the Broth

    Season the broth with salt, black pepper, and crushed red pepper flakes.

    Add Seafood

    Once the broth is simmering, add the shrimp, fish fillets, mussels, and clams. Cook for about 5-7 minutes until the seafood is cooked through and the mussels and clams have opened.

    Combine with Sofrito

    Add the sofrito back into the pot, stirring to combine all ingredients. Let it cook for an additional 2-3 minutes to heat through.

    Adjust Seasoning

    Taste the soup and adjust seasoning with additional salt and pepper if needed.

    Serve Hot

    Ladle the Sopa de Mariscos into bowls and serve hot, garnished with extra cilantro if desired.
