Cooking Shrimp
Prepare the Shrimp
In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt.
Cook the Shrimp
Once the water is boiling, add the large shrimp and cook for about 2-3 minutes or until they turn pink and opaque.
Making Cocktail Sauce
Combine Ingredients
In a mixing bowl, combine the diced tomatoes, minced chipotle peppers, lime juice, ketchup, chopped cilantro, and salt.
Mix Well
Stir the mixture until all ingredients are well combined. Adjust seasoning if necessary.
Assembling the Dish
Combine Shrimp with Sauce
Add the cooled shrimp to the cocktail sauce and gently toss to coat the shrimp evenly.
Serve
Transfer the shrimp cocktail to a serving platter, top with diced avocado, and garnish with cilantro leaves. Serve with lime wedges on the side.
