Ceviche Preparation

    Prepare the Shrimp

    In a glass or ceramic bowl, combine the peeled and deveined shrimp with lime juice. Make sure the shrimp is fully submerged in the lime juice, as this will 'cook' the shrimp. Cover the bowl with plastic wrap and refrigerate for about 30 minutes or until the shrimp turns opaque.

    Mix the Ceviche Ingredients

    After the shrimp has marinated, add the chopped red onion, diced tomato, chopped cilantro, and finely chopped jalapeño to the bowl. Season with salt and black pepper to taste. Gently toss all ingredients together until well combined.

Plantain Chips Preparation

    Prepare the Plantains

    Peel the green plantains and slice them into thin chips (about 1/8 inch thick) using a sharp knife or a mandoline for even slices.

    Fry the Chips

    In a large frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, add the sliced plantains in batches, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side or until they are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fried plantain chips and transfer them to a paper towel-lined plate to drain excess oil. Season with salt while they are still hot.
