Meats Preparation

Marinate the Meats
In a large bowl, combine the beef steak, chicken thighs, and chorizo sausage. Season with salt and black pepper. Set aside to marinate while you prepare the BBQ sauce.

Prepare the Pork Ribs
Rub the pork ribs with salt and black pepper. Set aside for grilling.
Guava BBQ Sauce Preparation

Make the BBQ Sauce
In a saucepan over medium heat, combine guava paste, ketchup, apple cider vinegar, brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until the guava paste is dissolved and the sauce is heated through, about 5-7 minutes. Remove from heat and set aside.

Prepare the Fries
Peel and cut the potatoes into fries. Rinse them under cold water and pat dry with paper towels.

Fry the Potatoes
In a deep-fryer or large pot, heat vegetable oil to 180°C (350°F). Carefully add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.
Grilling

Grill the Meats
Preheat the grill to medium-high heat. Grill the beef steak for about 6-8 minutes per side for medium-rare. Grill the chicken thighs for about 5-7 minutes per side, until cooked through. Grill the chorizo until browned, about 4-5 minutes. Lastly, grill the pork ribs for about 10-15 minutes, brushing with guava BBQ sauce during the last few minutes of cooking.
