Croquetas

Blackberry Marmalade

Method

Croquetas

  1. 1

    Prepare the Mushroom Filling

Finely chop the mushrooms, onion, and garlic.

  2. 2

    Cook the Vegetables

In a skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until softened, about 3-4 minutes. Then, add the chopped mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.

  3. 3

    Make the Roux

Sprinkle the flour over the mushroom mixture, stirring to coat. Cook for 2 minutes, then gradually add the milk while stirring continuously to avoid lumps. Cook until the mixture thickens, about 5 minutes.

  4. 4

    Season the Mixture

Add nutmeg, salt, and black pepper. Mix well, then remove from heat and let it cool completely.

  5. 5

    Form the Croquetas

Once cooled, shape the mixture into small cylindrical shapes (about 3 inches long).

  6. 6

    Coat the Croquetas

Beat the egg in a bowl. Dip each croqueta into the egg, then roll in the breadcrumbs until fully coated.

  7. 7

    Fry the Croquetas

Heat the oil in a deep frying pan over medium heat. Fry the croquetas in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Blackberry Marmalade

  1. 8

    Prepare the Blackberries

In a saucepan, combine blackberries and sugar. Mash the blackberries lightly to release juices.

  2. 9

    Cook the Marmalade

Add lemon juice to the mixture and cook over medium heat. Stir occasionally until the mixture thickens, about 15-20 minutes.

  3. 10

    Cool and Store

Remove from heat and let cool. Once cooled, store in a jar in the refrigerator.
