Pulled Pork Preparation

    Marinate the Pork

    In a large bowl, combine the garlic cloves (minced), cumin, oregano, salt, black pepper, orange juice, lime juice, and bay leaves. Mix well and add the pork shoulder, ensuring it’s fully coated. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover it with aluminum foil. Roast for about 4-5 hours until the pork is tender and easily pulls apart with a fork. Remove from oven and let it rest for 20 minutes before shredding.

Mojo de Aioli Preparation

    Prepare the Aioli

    In a bowl, combine the mayonnaise, minced garlic cloves, cilantro, lime juice, and salt. Mix until smooth and well combined. Adjust seasoning to taste. Refrigerate until ready to serve.

Sandwich Assembly

    Assemble the Sandwiches

    Slice the Cuban bread lengthwise, leaving one side attached. Spread a generous amount of mojo de aioli on both sides of the bread. Layer the shredded pulled pork, pickles, sliced tomatoes, and sliced avocado inside the bread. Close the sandwich and press down gently.

    Toast the Sandwich

    Heat a pan or a sandwich press over medium heat. Place the sandwich on the pan and press down with a spatula. Toast until the bread is golden brown and crispy, about 3-5 minutes per side. Serve warm.
