    Soak the Beans

    Rinse the black beans under cold water. Place the beans in a large bowl and cover them with 6 cups of water. Let them soak overnight or for at least 6-8 hours.

    Drain and rinse the soaked beans. In a large pot, add the beans and cover with fresh water (about 6 cups). Add 1 tsp of salt. Bring to a boil, then reduce heat to low and simmer for about 1-1.5 hours until the beans are tender. Add more water as needed to keep the beans covered.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 5 minutes until they begin to soften.

    Add the minced garlic, cumin, oregano, and black pepper to the skillet. Sauté for an additional 2-3 minutes until the garlic is fragrant.

    Once the beans are cooked, drain them and add them to the skillet with the sautéed vegetables. Stir to combine, then add the lime juice and chopped cilantro. Mix well and cook for an additional 5 minutes to heat through.
