Brewing Process
1. Mashing
Heat 100 liters of water to 65°C (149°F). Add 15 kg of malted barley and 5 kg of corn to the water. Stir well and maintain this temperature for about 60 minutes. This process converts the starches into fermentable sugars.
2. Lautering
After mashing, separate the liquid from the solid grains using a lauter tun. The liquid extracted is called wort. Rinse the grains with hot water to extract as much sugar as possible.
3. Boiling
Bring the wort to a boil and add 200 g of hops. Boil for 60 minutes. Hops add bitterness and aroma to the beer.
4. Cooling
After boiling, cool the wort quickly to around 20°C (68°F) using a wort chiller.
5. Fermentation
Transfer the cooled wort to a fermentation vessel and add 1 kg of yeast. Seal the vessel with an airlock and let it ferment for 7 to 14 days at a temperature of 18-20°C (64-68°F).
