Make the roux
Add the flour to the butter and jamon mixture, stirring continuously for about 2 minutes until the mixture is golden and bubbly.

Add the milk
Gradually pour in the milk while continuously whisking to avoid lumps. Cook for another 5-7 minutes until the mixture thickens.

Season the mixture
Add nutmeg, salt, and black pepper to the mixture. Stir well to combine. Remove from heat and let it cool.

Shape the croquetas
Once cooled, take spoonfuls of the mixture and shape them into small logs or balls.

Fry the croquetas
Heat oil in a deep pan to 180°C (350°F). Fry the croquetas in batches, cooking for about 3-4 minutes or until golden brown. Drain on paper towels.

Prepare the figs
Clean the fresh figs and remove the stems. Chop them into small pieces.

Blend the mixture
Using an immersion blender, blend the mixture until smooth. Alternatively, you can transfer it to a blender and blend until smooth.

Simmer the marmalade
Return the blended mixture to the saucepan and simmer for an additional 10 minutes until it thickens slightly.

Cool and store
Remove from heat and let cool completely. Transfer to a clean jar and store in the refrigerator.
