Method

Preparation

  1. 1

    Rinse the Rice

Place the long-grain white rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch and prevents it from becoming gummy.

  2. 2

Soak the Beans (if using dried)

If using dried black beans, soak them in water overnight. If using canned beans, rinse and drain them before use.

Cooking

  1. 3

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the diced onion and green bell pepper, and sauté until they are soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

  2. 4

    Add Spices

Add the bay leaves, cumin powder, oregano, salt, black pepper, and red pepper flakes to the pot. Stir well to combine and cook for 1-2 minutes to toast the spices slightly.

  3. 5

    Add Rice and Beans

Add the rinsed rice and cooked black beans to the pot, stirring to coat the rice with the oil and spices.

  4. 6

    Add Chicken Broth

Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.

  5. 7

    Fluff and Serve

After 20 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes. Remove the bay leaves, fluff the rice with a fork, and serve warm.
