Fritter Batter

Cayenne Powdered Sugar

Frying Oil

Method

Prepare Fritter Batter

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Stir until well mixed.

  2. 2

    Add Wet Ingredients

In another bowl, whisk together the eggs and milk until well blended. Pour this mixture into the dry ingredients and stir until just combined.

  3. 3

    Incorporate Conch and Green Onions

Fold in the chopped conch meat and chopped green onions into the batter until evenly distributed.

Make Cayenne Powdered Sugar

  1. 4

    Combine Ingredients

In a small bowl, mix together the powdered sugar and cayenne pepper until well combined. Set aside for dusting.

Fry Fritters

  1. 5

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

  2. 6

    Fry the Batter

Using a tablespoon, drop spoonfuls of the fritter batter into the hot oil. Fry in batches, making sure not to overcrowd the pan.

  3. 7

    Cook Until Golden Brown

Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through.

  4. 8

    Drain Excess Oil

Using a slotted spoon, remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil.

Serve

  1. 9

    Dust with Cayenne Powdered Sugar

Once the fritters have cooled slightly, dust them generously with the cayenne powdered sugar mixture before serving.
