In a medium heavy-bottomed saucepan set over low heat, combine the milk and cream cheese cubes. Warm gently, stirring frequently, until the cream cheese has mostly melted and the mixture is smooth (about 3–4 minutes).

Gradually add the shredded cheese, a handful at a time, stirring constantly so the cheese melts evenly and the sauce stays smooth. Maintain low heat to prevent graininess or separation.

Stir in the diced green chiles, chopped pickled jalapeños, garlic powder, ground cumin, salt, and black pepper. Continue cooking on low for 2–3 minutes until everything is heated through and the dip is silky. Taste and adjust seasoning.

Keep warm on the lowest heat setting or transfer to a small slow cooker set to warm while assembling other components. Garnish with chopped cilantro just before serving.

Guacamole

Halve and pit the avocados, then scoop the flesh into a medium bowl. Immediately drizzle the lime juice over the avocado to prevent browning.

Using a fork or potato masher, mash the avocados to your preferred texture (chunky or smooth).

Fold in the minced red onion, diced tomato, finely minced jalapeño (if using), chopped cilantro, kosher salt, and black pepper. Taste and adjust lime, salt, or jalapeño to preference.

Cover tightly with plastic wrap pressed directly onto the surface of the guacamole to minimize air contact and set aside at room temperature until assembly (or refrigerate briefly if not serving within 30 minutes).

Bean Dip (Refried Bean Layer)

In a small saucepan over medium heat, combine the refried beans, sour cream, taco seasoning (or chili powder), ground cumin, and salt. Stir frequently until the mixture is warmed through and smooth, about 4–6 minutes. If too thick, add 1–2 tablespoons water or milk to reach a spreadable consistency.

Transfer the bean mixture to a serving bowl or to the base of a shallow serving platter. Sprinkle the shredded cheddar or Mexican blend cheese over the top and place under a broiler for 1–2 minutes (watch carefully) to melt the cheese, or cover and let the residual heat melt the cheese.

Top with sliced green onions and set aside until assembly.

Assembly & Serving

Select a large serving platter or use three separate bowls for a composed presentation. If using a platter, spread the warm bean dip in a wide shallow layer in the center or one side.

Place the warm cheese dip in a small bowl or a mini Crock-Pot and position it next to the bean layer. Arrange the guacamole in a separate bowl near the other dips.

Garnish the bean layer with diced tomatoes, sliced black olives (if using), chopped cilantro, and an additional sprinkle of shredded cheese or green onions for color.

Surround the dips with tortilla chips, tostada scoops, and lime wedges. Serve immediately so the cheese dip stays melty and the guacamole stays fresh.

For individual servings, spoon a bit of each dip onto chips or small tostadas: warm bean, a dollop of guacamole, and a drizzle of queso. Enjoy.
