Bloom the Gelatin

In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5-10 minutes until it softens.

Heat the Cream Mixture

In a saucepan, combine the heavy cream and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.

Combine Gelatin and Cream

Remove the saucepan from heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.

Pour into Molds

Pour the mixture into individual serving molds or cups. Allow it to cool at room temperature for about 30 minutes.

Chill

Cover the molds with plastic wrap and refrigerate for at least 4 hours, or until set.

Serve

To serve, run a knife around the edges of the panna cotta, then invert onto a plate. Serve with your choice of fruit or sauce.
