Preparation and Assembly
Make the Meatballs
In a large bowl, combine ground veal, ground pork, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.
Form and Bake
Preheat the oven to 400°F (200°C). Form the meat mixture into meatballs about 1.5 inches in diameter. Place on a baking sheet lined with parchment paper. Bake for 20 minutes or until cooked through.
Prepare the Sauce
In a saucepan, heat the Spanish tomato sauce over medium heat until warmed through.
Assemble the Meatball Melts
Slice the sub rolls in half lengthwise. Place the meatballs on the bottom half of each roll, spoon the warm tomato sauce over the meatballs, and top with slices of provolone cheese.
Melt the Cheese
Broil the assembled sandwiches in the oven for about 2-3 minutes, or until the cheese is melted and bubbly.
Serve
Remove from the oven, let cool slightly, and serve immediately.
