Preparing Tostones

Peel and Slice Plantains

Start by peeling the green plantains. Cut off the ends, then make a lengthwise slit along the skin and remove the peel. Slice the plantains into 1-inch thick pieces.

Heat Oil

In a large frying pan, pour in the vegetable oil and heat it over medium-high heat. Allow the oil to reach a temperature of about 350°F (175°C).

Fry Plantain Slices

Once the oil is hot, carefully add the plantain slices to the pan. Fry them for about 3-4 minutes on each side until they are lightly golden and cooked through.

Remove and Drain

Using a slotted spoon, remove the fried plantains from the oil and place them on a paper towel-lined plate to drain excess oil.

Flatten the Plantains

Using the bottom of a flat object, like a glass or a spatula, gently flatten each fried plantain slice to about half an inch thick.

Fry Again

Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes until they are crispy and golden brown.

Season with Salt

Once fried, remove the tostones from the oil and place them on a paper towel-lined plate again. Sprinkle them with salt while they are still hot.

Prepare Garlic

Peel and mince the garlic cloves finely.

Combine Ingredients

In a bowl, mix the minced garlic, mayonnaise, lemon juice, olive oil, and salt until well combined.

Adjust to Taste

Taste the sauce and adjust the seasoning if necessary, adding more salt or lemon juice to suit your preference.
