Preparing the Base

Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk together until well blended.

Combine Wet Ingredients

In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Whisk until fully combined.

Combine Wet and Dry Mixtures

Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix. The batter should be slightly lumpy.

Prepare Baking Dish

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish and pour the batter into the dish, spreading it evenly.

Mix Coconut Topping

In a medium-sized bowl, combine the shredded coconut, sweetened condensed milk, and egg yolks. Mix until all ingredients are well incorporated.

Carefully spread the coconut mixture over the batter in the baking dish, ensuring it covers the surface evenly.

Baking

Bake the Palma Louca

Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve

Once baked, remove from the oven and allow to cool in the dish for at least 10 minutes before cutting into squares and serving.
