Preparation of Marinade
Make the Marinade
In a large bowl, combine minced garlic, soy sauce, lemon juice, dried oregano, ground black pepper, salt, and bay leaves. Mix well until all ingredients are well combined.
Marinating the Pork
Marinate the Pork
Using a sharp knife, make shallow cuts in the pork shoulder or whole pig. Pour the marinade over the meat, ensuring it’s well coated. Cover and refrigerate for at least 12 hours, preferably overnight.
Roasting the Pork
Preheat the Oven
Preheat your oven to 150°C (300°F).
Prepare for Roasting
Remove the pork from the marinade and let it come to room temperature. Reserve the marinade for basting. Rub vegetable oil all over the pork.
Finishing Touch
Increase the oven temperature to 220°C (425°F) during the last 30 minutes of cooking to achieve a crispy skin.
Let it Rest
Once cooked, remove the pork from the oven and let it rest for at least 20 minutes before slicing. This helps to retain the juices.
