Method
Prep
Bring cheese to room temperature
Remove provolone from refrigerator 20–30 minutes before cooking so it softens slightly — this helps it melt evenly without cracking.
If using a whole round (about 10–12 oz), leave it as-is. If using a thick slice or half-round, trim to a uniform 3/4–1 inch thickness so it heats consistently.
Seasoning
Place the cheese on a small cast-iron skillet, heatproof gratin dish, or provolone skillet that will go on the grill or stovetop. Drizzle 1 tablespoon of olive oil evenly over the top surface.
Sprinkle the dried oregano evenly over the olive-oil-coated surface, then scatter the crushed red pepper flakes, black pepper, and coarse sea salt. Pat gently so seasonings adhere.
Grilling / Broiling
Grill method (recommended for authentic flavor)
Preheat a gas or charcoal grill to medium-high (about 400–450°F / 200–230°C). Place the cast-iron skillet or an aluminum foil tray with the seasoned cheese directly on the grill grates. Close the lid and cook 6–9 minutes until the edges are bubbling and the top shows golden-brown spots. Watch closely to avoid excessive runny overflow — rotate the skillet if browning is uneven.
Broiler / Oven method (if no grill available)
Preheat the oven broiler with a rack 6 inches below the element. Put the skillet with cheese on a baking sheet and broil 3–6 minutes, watching continuously, until the cheese bubbles and the top browns in spots. Do not leave unattended; broilers vary.
Finishing & serve
Remove the skillet from heat using oven mitts. Immediately drizzle the remaining 1 tablespoon of olive oil around and slightly over the edges of the bubbling cheese to add gloss and flavor.
Allow leftovers to cool slightly before covering and refrigerating. Reheat gently in a skillet or under a broiler until warmed through.
