Prepare the Crust

Combine Ingredients

In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until the crumbs are evenly coated.

Press Mixture

Press the mixture firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 10 minutes. Remove and let cool.

Make the Cheesecake Filling

Blend Cream Cheese

In a large bowl, beat the softened cream cheese until smooth and creamy.

Add Dulcey and Sugar

Add melted Dulcey chocolate and powdered sugar to the cream cheese. Mix until well combined.

Incorporate Heavy Cream

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate mixture.

Add Passion Fruit and Vanilla

Fold in the passion fruit puree and vanilla extract until just combined.

Fill the Crust

Pour the cheesecake filling into the cooled crust, spreading it evenly. Smooth the top with a spatula.

Chill

Cover and refrigerate the cheesecake for at least 4 hours or overnight until set.

Garnish and Serve

Before serving, sprinkle the cheesecake with passion fruit seeds and Dulcey chocolate shavings.

Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.
