Cake Preparation

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

Cream Butter and Sugar

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.

Combine Dry and Wet Ingredients

In a separate bowl, sift together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the milk.

Divide the Batter

Divide the batter evenly between the prepared pans and smooth the tops.

Bake the Cakes

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Whip the Cream

In a medium bowl, whip the heavy cream until soft peaks form.

Prepare the Filling

In another bowl, mix together the partridge berries, powdered sugar, butter, and chopped pineappleweed until well combined.

Combine Filling Ingredients

Fold the whipped cream into the berry mixture gently until combined.

Assembly

Layer the Cake

Place one cake layer on a serving plate and spread half of the filling over the top.

Top with the second cake layer and spread the remaining filling on top.

Dust the top with powdered sugar and garnish with partridge berries.
