Prepare the Pork Belly

Preheat the oven to 425°F (220°C). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Rub the olive oil, salt, black pepper, and minced garlic all over the pork belly.

Roast the Pork Belly

Place the pork belly on a rack in a roasting pan and roast in the preheated oven for 30 minutes. Reduce the oven temperature to 325°F (160°C) and continue to roast for another 1.5 hours until the meat is tender and the skin is crispy.

Prepare the Sauce

In a saucepan, combine the chicken stock, diced beetroot, and honey. Bring to a simmer and cook for about 10 minutes until slightly thickened. Add the fresh strawberries and cook for an additional 5 minutes.

Serve the Roast

Once the pork belly is done, remove it from the oven and let it rest for 10 minutes before slicing. Serve with the strawberry and beetroot sauce drizzled over the slices.
