Make the crust

In a large bowl, mix the flour and powdered sugar. Add the diced butter and mix until crumbly. Stir in the egg yolk and cold water until the dough forms. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Pre-bake the crust

Preheat the oven to 350°F (175°C). Roll out the chilled dough and fit it into a tart pan. Prick the bottom with a fork and bake for 15 minutes or until lightly golden. Allow to cool.

Prepare the filling

In a bowl, whisk together granulated sugar, eggs, lemon juice, and lemon zest until well combined. Stir in heavy cream.

Bake the filling

Pour the filling into the cooled crust. Bake for 25-30 minutes or until set. Allow to cool completely at room temperature.

Topping Preparation

Make the whipped mascarpone

In a mixing bowl, combine mascarpone cheese, heavy cream, honey, and vanilla extract. Whip until soft peaks form.

Assembly

Serve the tart

Top the cooled lemon tart with whipped mascarpone. Drizzle with additional honey if desired. Slice and serve.
