Prepare the Salmon
Preheat your oven to 375°F (190°C). Season the king salmon fillets with olive oil, sea salt, black pepper, and lemon zest.
Bake the Salmon
Place the seasoned salmon on a baking tray lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until cooked through.
Cook the Peas
While the salmon is baking, bring a small pot of salted water to a boil. Add the fresh peas and cook for 2-3 minutes until tender. Drain and set aside.
Combine Peas and Elderflower
In a bowl, mix the cooked peas with elderflower cordial and fresh dill. Adjust seasoning with salt and pepper to taste.
Serve the Dish
Once the salmon is cooked, plate the salmon fillets and top with the pea and elderflower mix. Garnish with Oscietra caviar on top before serving.
