Cake Preparation

Preheat the Oven

Preheat your oven to 325°F (160°C) and grease a 9-inch round cake pan.

Mix Dry Ingredients

In a large bowl, sift together the flour, baking powder, and salt.

Whip Egg Whites

In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.

Prepare Wet Ingredients

In another bowl, whisk together the egg yolks, sugar, honey, milk, brewed Earl Grey tea, and vanilla until smooth.

Combine Mixtures

Gently fold the dry ingredients into the wet mixture until just combined. Then carefully fold in the whipped egg whites, being careful not to deflate them.

Bake the Cake

Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

Cool the Cake

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

In a bowl, combine the sliced peaches and nectarines.

Drizzle honey and lemon juice over the fruit and toss gently to coat.
