Prepare Pork Belly

Score the Pork

Using a sharp knife, score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.

Season and Roast

Rub the pork belly all over with salt and black pepper. Place it in a roasting pan and drizzle with olive oil. Roast in a preheated oven at 400°F (200°C) for about 2 hours, or until the skin is crispy and the meat is tender.

Make Salsa Verde

Blend Ingredients

In a food processor, combine parsley, cilantro, garlic, capers, lemon juice, and olive oil. Blend until smooth. Adjust seasoning with salt and pepper to taste.

Prepare Mustard Greens

Saute the Greens

In a skillet, heat olive oil over medium heat. Add the mustard greens and sauté until wilted, about 5-7 minutes. Season with salt and pepper.

Serve

Plate the Dish

Slice the crispy pork belly and serve it on a plate alongside the sautéed mustard greens. Drizzle with salsa verde before serving.
