Preparation
Marinate the Venison
Rub the marinade over the Canadian venison loin and let it marinate for at least 2 hours, preferably overnight.
Prepare Celeriac
Peel and slice the celeriac into even wedges. Boil in salted water for about 10 minutes until tender, then drain.
Prepare Cherries
In a small saucepan, cook the pitted cherries over medium heat until they start to soften. Add juniper berries and simmer for an additional 5 minutes.
Cooking
Chargrill the Venison
Preheat a grill or grill pan over medium-high heat. Grill the marinated venison loin for about 4-5 minutes on each side, or until it reaches your desired doneness.
Serve
Plate the grilled venison with celeriac wedges and top with the cherry-juniper mixture. Garnish with chopped parsley.
