For the fish

Prepare the fish

    Pat dry and season

    Pat fish fillets dry with paper towels. Season both sides evenly with kosher salt (about 3/4 tsp per side for each fillet depending on thickness) and freshly ground black pepper.

    Lightly flour

    Place the all-purpose flour on a shallow plate and lightly dredge each fillet, shaking off excess. The thin dusting helps create a light golden crust and prevents sticking.

Cook the fish

    Heat pan

    Place a large heavy skillet (stainless steel or cast iron) over medium-high heat. Add the extra-virgin olive oil and 1 tablespoon of butter. When the butter foams and the oil shimmers (about 1–2 minutes), the pan is ready.

    Sear fillets

    Working in two batches if necessary (do not overcrowd), place fillets presentation-side down in the pan. Cook without moving for 3–4 minutes, until a golden-brown crust forms and the fish releases easily from the pan.

    Flip and finish

    Carefully flip fillets and lower heat to medium. Add the remaining 1 tablespoon butter to the pan and spoon the melted butter over the fish for 1–3 minutes more, until an instant-read thermometer reads 125–135°F (52–57°C) for moist, flaky fish (finished temperature rises a few degrees while resting). Transfer cooked fillets to a warm plate and tent loosely with foil.

Make the lemon-caper sauce

    Sauté aromatics

    In the same skillet with any browned bits and about 1 tablespoon oil/butter left, lower heat to medium-low and add the minced shallot. Sauté 1–2 minutes until softened but not browned. Add the minced garlic and cook 30 seconds until fragrant.

    Deglaze

    Pour in the dry white wine (or stock) and use a wooden spoon to scrape up browned bits from the pan. Let the liquid reduce by about half, 2–3 minutes, concentrating the flavor.

    Add lemon and capers

    Stir in the fresh lemon juice and the rinsed capers. Simmer gently for 1 minute to meld flavors.

    Finish with butter and herbs

    Remove the pan from direct heat. Whisk in the cold butter pieces a little at a time to emulsify the sauce into a glossy finish. Stir in the chopped parsley and taste; adjust with a pinch of sea salt if needed.

To serve

    Place a fish fillet on each warmed plate, spoon 1–2 tablespoons of the lemon-caper sauce over each fillet (more on the side if desired). Garnish with a lemon wedge and a parsley sprig. Finish with a light sprinkle of sea salt if using and serve immediately.
