Prepare glass
If you prefer a salted rim, rub a lemon wedge around the rim of a rocks or coupe glass. Dip the rim lightly into flaky sea salt or a small plate of coarse salt. If not using, simply chill the glass in the freezer for a few minutes or fill with ice while you mix the drink.

Measure and combine
In a cocktail shaker, add 2 oz Jose Cuervo tequila, 0.75 oz Amaro Nonino, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup.

Add ice and shake
Add 6 ice cubes to the shaker. Secure the lid and shake vigorously for 12–15 seconds, until the shaker is cold to the touch and well-chilled.

Strain
Discard ice from the chilled serving glass if you used it to chill. Strain the cocktail through a fine strainer (or the shaker’s strainer) into the prepared glass over 3–4 fresh ice cubes if serving on the rocks, or neat into a chilled coupe.

Notes
Adjust simple syrup from 0.5 oz to 0.25–0.75 oz to taste depending on the tartness of your lemons and your sweetness preference. Use reposado tequila for a slightly richer, oak-tinged profile or blanco for a brighter citrus-forward drink. Amaro Nonino adds gentle herbal and bitter-sweet complexity—substituting another amaro will change the profile.
