Asparagus

Method

Asparagus

  1. 1

    Prepare asparagus

Rinse the asparagus under cool running water to remove any grit. Pat dry with a clean kitchen towel or paper towels. Trim the woody ends by holding a spear in both hands and bending until it snaps, or line up the spears and cut off the bottom 1 to 1 1/2 inches with a knife. If spears are very thick, you can peel the bottom third of each stalk with a vegetable peeler to ensure even tenderness.

  2. 2

    Preheat and season

Preheat oven to 425°F (220°C) if roasting, or preheat a heavy skillet or grill pan over medium-high heat if pan-searing or grilling. Place the trimmed asparagus on a rimmed baking sheet (if roasting) or in a bowl (if pan/grill). Drizzle the 1.5 tablespoons of extra-virgin olive oil over the spears and toss to coat evenly. Sprinkle with 1 teaspoon coarse salt and 1/2 teaspoon freshly ground black pepper. If using garlic, finely mince the clove and toss with the asparagus so it will roast/sear lightly with the spears.

  3. 3

Spread the asparagus in a single layer on the baking sheet so they are not crowded. Roast in the preheated 425°F (220°C) oven for 10–14 minutes depending on thickness: thin spears 8–10 minutes, medium 10–12 minutes, thick 12–14 minutes. Roast until the stalks are tender when pierced with a fork and lightly browned at the tips and edges. Remove from oven.

  4. 4

    Pan-sear or grill (method 2)

If using a skillet or grill pan, heat it until hot but not smoking. Add 1/2 tablespoon oil to the pan and arrange asparagus in a single layer. Cook, turning occasionally, for 6–10 minutes until tender and charred in spots — thinner spears toward 6 minutes, thicker ones up to 10. If grilling outdoors, place perpendicular to the grates or use a grill basket and cook similarly over medium-high heat.

  5. 5

    Finish and serve

Transfer the cooked asparagus to a serving platter. Zest the lemon over the spears and cut the lemon in half; squeeze 1/2 to 1 lemon (about 1 tablespoon juice) evenly over the asparagus to taste. If using, add 1 teaspoon butter and let it melt over the hot spears. Sprinkle 2 tablespoons grated Parmigiano-Reggiano or Pecorino over the top, and adjust seasoning with a pinch more salt and pepper if needed. Serve immediately while warm.

  6. 6

    Variations and notes

For a bright herb finish, toss with 1 tablespoon chopped fresh parsley, chives, or tarragon before serving. To make a richer side, drizzle with a little balsamic reduction or serve with a lemon-garlic aioli. If preparing ahead, roast until just tender, cool, and store refrigerated up to 2 days; reheat briefly in a hot oven or serve chilled as part of a salad.
