Cocktail

  1. 1

    Chill glass and ingredients

If possible, chill the wine or large goblet in the freezer for 5–10 minutes or fill it with ice and water to cool while you gather ingredients. Make sure Prosecco and sparkling water are well chilled.

  2. 2

    Prepare glass

Discard any ice/water used to chill the glass. Fill a large wine glass about three-quarters full with fresh ice cubes (roughly 1 cup of ice).

  3. 3

    Build the drink

Pour 3 oz Aperol over the ice first. This helps integrate the liqueur into the mix without excessive agitation.

  4. 4

    Add Prosecco

Slowly pour 3 oz chilled Prosecco down the side of the glass to preserve bubbles and create a layered visual. Pour gently to avoid excessive foaming.

  5. 5

    Top with sparkling water

Add 1 oz chilled sparkling water to the glass to lighten the cocktail and add effervescence. Adjust to taste (commonly 1–2 oz).

  6. 6

    Gently stir

Give the drink one or two gentle short stirs with a bar spoon to integrate the ingredients without losing carbonation.

  7. 7

    Garnish and serve

Thread an orange wheel onto the rim or drop it into the glass as a garnish. Serve immediately while cold and fizzy.
