Korokke (Potato Croquettes)

    Boil and Mash Potatoes

    Peel and cut the russet potatoes into even 2.5–3 cm (1 inch) cubes. Place in a pot, cover with cold water, add a pinch of salt, bring to a boil, then simmer until fork-tender (12–15 minutes). Drain thoroughly and return to the hot pot for 1 minute to dry off excess moisture. Mash the potatoes until smooth. Stir in 2 tbs unsalted butter, 60 ml milk and 1 tsp salt and 1 tsp black pepper. Taste and adjust seasoning. Set mashed potatoes aside to cool.

    Cook the Filling

    Heat 1 tbs vegetable oil in a sauté pan over medium heat. Add 1 finely chopped yellow onion and cook until soft and translucent, about 5–7 minutes. Add 300 g ground beef and cook, breaking it up, until browned and no longer pink, about 5 minutes. Season with 1 tbs soy sauce, 1 tbs Worcestershire sauce and taste for salt/pepper. Cook off any excess liquid until the mixture is relatively dry (a minute or two). Remove from heat and let cool slightly.

    Combine and Shape

    Fold the cooled meat mixture into the mashed potatoes until evenly distributed. Divide the mixture into 8 equal portions (for 4 servings — 2 korokke per person). With lightly floured hands, shape each portion into an oval or round patty about 1.5–2 cm thick. Place shaped patties on a tray and chill in the refrigerator for 20–30 minutes — this firms them up and makes coating easier.

    Coat the Korokke

    Set up a breading station: one shallow dish with 1 cup all-purpose flour, one with 2 beaten eggs, and one with 2 cups panko breadcrumbs. Lightly dust each chilled patty in flour, shake off excess, dip into beaten egg, then press into panko until fully coated. Place coated korokke on a tray and let rest 10 minutes to help the coating adhere.

    Fry Until Golden

    Heat 800 ml neutral frying oil in a deep pot or deep fryer to 170–175°C (340–350°F). If you don’t have a thermometer, test with a small breadcrumb — it should sizzle steadily and brown in about 45–60 seconds. Fry korokke in batches (do not overcrowd) for 3–4 minutes per batch, turning as needed, until evenly golden-brown and crisp. Transfer to a wire rack or paper towels to drain. Keep warm in a low oven (100°C / 210°F) if needed while finishing curry.

Japanese Curry Sauce

    Prepare Aromatics & Vegetables

    Peel and thinly slice 1 yellow onion and chop 1 carrot into 1 cm pieces. Mince 2 cloves garlic and grate 1 tbs fresh ginger. Grate half an apple (about 1/2 pcs) and set aside — the apple adds natural sweetness and depth.

    Sauté and Build Flavor

    In a medium saucepan, heat 1 tbs vegetable oil over medium heat. Add the sliced onion and cook, stirring occasionally, until deeply softened and beginning to caramelize, about 12–15 minutes. Add the chopped carrot and cook 3–4 minutes. Stir in the minced garlic, grated ginger and 1/2 grated apple and cook another 1 minute until fragrant.

    Add Spices and Roux

    Reduce heat to low. Stir in 1 tbs tomato paste, 2 tbs curry powder and 1 tsp garam masala, toasting the spices 30–45 seconds. Add 2 tbs all-purpose flour and 2 tbs unsalted butter, stirring constantly to make a smooth roux; cook 1–2 minutes to remove raw flour taste.

    Simmer the Sauce

    Slowly whisk in 500 ml beef or vegetable stock until smooth. Increase heat and bring to a gentle simmer. Add 1 tbs soy sauce, 1 tbs Worcestershire sauce and 1 tbs honey. Simmer uncovered for 20–25 minutes, stirring occasionally, until the carrot is tender and the sauce has thickened. If you prefer a smoother sauce, use an immersion blender and pulse briefly to break down the onion and carrot — keep some texture if you like chunky curry.

    Finish and Adjust

    Taste and adjust seasoning with 1 tsp salt and 1/2 tsp black pepper, or a touch more soy/Worcestershire/honey to balance sweetness and umami. If the sauce is too thin, simmer 3–5 minutes longer; if too thick, thin with up to 60–120 ml water or stock. Keep warm while frying korokke.

To Serve

    Divide 4 cups cooked Japanese short-grain rice among 4 plates. Place 2 korokke on each plate alongside or on top of the rice. Spoon generous portions of the hot curry sauce over the rice and partially over the korokke so the croquettes retain some crispness. Add shredded cabbage to the side for crunch and garnish with 2 tbs chopped parsley or green onions if using. Serve immediately.
