Brew and Sweeten

Bring water to a simmer

Pour 8 cups water into a medium pot or kettle and bring to a near-boil (just under a rolling boil).

Steep the tea

Remove the pot from heat. Add 4 tablespoons loose black tea (or 6 tea bags) to the hot water. Let steep 4 to 5 minutes for a balanced strength (shorter for lighter, longer for stronger).

Strain and sweeten

Strain out the tea leaves or remove tea bags. While the brewed tea is still hot, stir in 3 tablespoons granulated sugar until dissolved (or 1 tablespoon simple syrup if using). Stir in 2 tablespoons fresh lemon juice. Taste and adjust sweetness or acidity if desired.

Cool and Serve

Cool to room temperature for 15 to 20 minutes, then transfer the tea to the refrigerator and chill for at least 1 hour (or place in an ice bath to speed cooling for 15–20 minutes if you need it sooner).

When ready to serve, fill glasses with ice (about 1/2 to 1 cup ice per glass). Pour the chilled tea over ice. Add lemon slices and mint leaves as garnish if desired. Stir gently and serve immediately.

Leftovers: keep iced tea refrigerated in a covered pitcher for up to 4 days. If it tastes too concentrated after chilling, dilute with cold water or additional ice to taste.
