Mix

In a medium bowl, combine ground beef, bread crumbs, egg, finely chopped onion, minced garlic, Worcestershire sauce, kosher salt, and black pepper. Gently mix with your hands or a spoon until just combined — avoid overworking the meat to keep patties tender.

Shape

Divide mixture into 2 equal portions. Form each portion into a patty about 3/4-inch thick and slightly wider than the buns (they will shrink while cooking). Press a shallow dimple in the center of each patty with your thumb to prevent doming.

Cook

Heat a heavy skillet or cast-iron pan over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. When shimmering, add the patties (do not overcrowd). Cook for 3-4 minutes without moving to develop a crust. Flip and cook 2-3 minutes on the second side for medium (adjust time ±1 minute for desired doneness). In the last 30–60 seconds of cooking, place a slice of cheese on each patty, cover the pan briefly or reduce heat to low so the cheese melts. Transfer patties to a plate and tent loosely with foil to rest for 5 minutes.

While patties rest, whisk together mayonnaise, plain yogurt, tomato paste, hot sauce, smoked paprika, ground cumin, lemon juice, salt, and black pepper in a small bowl until smooth. Taste and adjust seasoning — add more hot sauce for heat or lemon for brightness. Keep refrigerated until assembly if making ahead.

Toast buns: Spread softened butter on the cut sides of the buns. Heat a clean skillet over medium heat and toast buttered sides 1-2 minutes until golden and fragrant. Alternatively, toast under a broiler for 45–60 seconds, watching carefully.
