Prepare bread
Preheat oven to 375°F (190°C). Lay 8 slices of bread on a work surface. Spread about 1/2 tablespoon of softened butter evenly onto one side of each slice (this will be the exterior that toasts). On the opposite, unbuttered side of 4 bread slices, spread 1/2 teaspoon Dijon mustard each.
Assemble sandwiches
Place one Swiss cheese slice on each mustard-spread slice. Top each with 3 slices of deli ham arranged evenly. Sprinkle 2 tablespoons of shredded sharp cheddar over the ham, then top with another Swiss slice if you like extra melt. Close each sandwich with the remaining bread slice, buttered side facing out.
Cook sandwiches
Place assembled sandwiches on a baking sheet lined with parchment or foil. Bake in the preheated oven for 10 minutes. After 10 minutes, flip each sandwich and bake another 6–8 minutes until the bread is golden brown and the cheese is melted. Alternatively, heat a large skillet or griddle over medium heat and cook 3–4 minutes per side until golden and the cheese is melted; press gently with a spatula for even contact.
Rest and slice
Remove sandwiches from oven or skillet and let rest 2 minutes to allow cheese to set slightly. Slice each sandwich in half on the diagonal and transfer to plates.
Hollandaise-style (optional warm sauce)
While the sandwiches bake, whisk together 1/2 cup mayonnaise, 2 tablespoons Greek yogurt (or sour cream), 1 teaspoon lemon juice, 1/2 teaspoon Dijon mustard, 1 teaspoon hot water (to thin as needed), 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl until smooth. Warm the sauce gently in a small microwave-safe bowl for 10–15 seconds or place the bowl over a pot of simmering water for 30–45 seconds so it's warm but not hot. Taste and adjust salt or lemon as desired. Spoon 1–2 tablespoons of warm sauce over each halved sandwich or serve on the side for dipping.
Garnish / optional
If using, tuck 1–2 pickle slices inside each sandwich before resting or serve them on the side. Sprinkle chopped parsley over plated sandwiches for color.
