Prepare cheese and bread

Grate or thinly slice the sharp cheddar and grate the gruyère. If using tomato, slice it into two thin rounds. Lay out two slices of sourdough on a work surface.

Butter or spread bread

Spread the unsalted butter evenly on one side of each bread slice. If you prefer mayonnaise for extra browning and tang, spread mayonnaise on the outside (butter on outside also works). The butter/mayo side will contact the skillet.

Assemble sandwich

Place one slice of bread buttered-side down in front of you. On the unbuttered face, layer half the cheddar (about 1/2 cup), then the gruyère (about 1/4 cup), add tomato slices if using, then the remaining cheddar and gruyère to create an even cheese layer. Season the cheese lightly with the ground black pepper. Top with the second bread slice, buttered-side up.

Heat skillet and cook

Preheat a nonstick or cast-iron skillet over medium-low to medium heat for 2–3 minutes so it heats evenly but not too hot. Place the assembled sandwich in the skillet. Cook for 3–4 minutes on the first side, pressing gently with a spatula occasionally, until the bread is golden brown and the cheese begins to melt. If the bread is browning too fast before the cheese melts, reduce the heat to low and cover the skillet with a lid to trap heat and encourage melting.

Flip and finish

Flip the sandwich carefully with a spatula and cook the second side for 2–4 minutes until golden brown and the cheese is fully melted. If needed, cover for 1–2 minutes to finish melting without burning the bread.

Rest and serve

Transfer the grilled cheese to a cutting board and let it rest for 1 minute to allow the cheese to set slightly. Slice the sandwich in half diagonally if desired and serve immediately.
