Pat the slices dry with paper towels to remove surface moisture. Dry slices help the coating adhere and reduce oil splatter.

Make dry mix
In a shallow dish or wide bowl combine the all-purpose flour, cornstarch, fine salt, black pepper, garlic powder, and smoked paprika (if using). Whisk to evenly distribute seasonings.
Prepare wet mix
In a separate shallow bowl beat the eggs with the milk or water until smooth. The liquid thins the egg and yields a lighter coating.
Working in batches, dredge each mushroom slice first in the dry mix, shaking off excess, then dip into the egg wash, allowing excess to drip back into the bowl, and finally return to the dry mix for a light second coating. Press gently so the dry mix adheres. Place breaded slices on the prepared plate; do not overcrowd.

Heat oil
Pour vegetable oil into a heavy skillet (cast-iron or stainless) to a depth of about 1/4 to 1/2 inch. Heat over medium heat until oil reaches 350°F (175°C) or until a pinch of flour sizzles immediately when dropped into the oil.
Fry slices
Working in single layers and not overcrowding the pan, carefully add breaded mushroom slices to the hot oil. Fry 2–3 minutes per side, or until golden brown and crisp. Use tongs or a slotted spatula to flip gently to avoid losing coating. Maintain oil temperature by adjusting heat as needed; if it browns too quickly lower the heat.
When slices are golden on both sides, transfer them to the paper towel–lined plate to drain. Lightly season with kosher salt while still hot.
Finish & Serving
If you have multiple batches, keep finished slices warm on a baking sheet in a 200°F (95°C) oven while you fry the remaining mushrooms to serve them all hot.
