Prepare aromatics
Heat 2 tablespoons unsalted butter in a skillet over medium heat. Add the finely minced shallot and diced celery and sauté until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant. Remove from heat and let cool 3–4 minutes.
Combine filling
In a mixing bowl, gently flake 1 cup lump crab meat with a fork, taking care to remove any shell pieces. Add the cooled shallot-celery mixture, 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 2 tablespoons chopped parsley, 1 tablespoon lemon juice, 1 teaspoon Old Bay seasoning, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Stir gently to combine.
Bind and adjust
Add 1/4 cup panko breadcrumbs and the beaten egg to the crab mixture and fold gently until ingredients hold together. If mixture seems too wet, add up to 1 tablespoon additional panko. Taste and adjust seasoning with more salt, lemon, or Old Bay as desired. Refrigerate filling while preparing vessels, about 10 minutes — this helps it hold shape when stuffed.

Prepare vessels
Preheat the oven to 375°F (190°C). If using mushrooms, wipe them clean and remove stems; if using peppers or tomatoes, halve and scoop seeds. Brush the inside of each vessel lightly with 1 tablespoon olive oil distributed evenly (or oil spray). Arrange vessels in a baking dish large enough to hold them snugly.
Stuff vessels
Fill each mushroom cap (or vegetable half) generously with the chilled crab mixture, mounding slightly. You should get about 8 stuffed pieces from the quantities listed. Smooth the tops so they hold together.
Add topping
Mix 2 tablespoons grated Parmesan with 2 tablespoons panko breadcrumbs. Sprinkle this mixture evenly over the top of each stuffed vessel. Lightly brush the exposed tops with 1 tablespoon melted butter to help browning and flavor.
Bake
Bake in the preheated oven for 12–15 minutes, until filling is set and topping is golden. If you want a more browned top, switch the oven to broil for the last 1–2 minutes while watching carefully to avoid burning.
