Form patties

Divide the ground beef into two equal portions (about 8 oz / 225 g each). Gently shape each portion into a patty about 3/4 inch thick and slightly wider than the buns. Handle the meat minimally so it stays tender.

Press a shallow dimple into the center of each patty with your thumb — this helps them cook evenly and reduces puffing.

Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat for 2–3 minutes until very hot. Add 1 tablespoon vegetable oil and swirl to coat. Place the patties in the pan, leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms on the bottom.

Flip the patties and cook the second side for 2–3 minutes for medium doneness. During the last 30–45 seconds of cooking, place one cheddar slice on each patty and cover the pan briefly (lid or a large plate) to melt the cheese.

Remove patties from the pan and tent with foil to rest for 3–5 minutes so juices redistribute.

Toast buns

While patties rest, spread about 1/2 tablespoon unsalted butter on the cut face of each bun half. Return the same skillet to medium heat (wipe if necessary) and place buns butter-side down in the pan. Toast 1–2 minutes until golden and crisp. Remove and keep warm.

Assemble

Spread ketchup and mustard on the bottom bun (about 1 tablespoon ketchup and 1/2 tablespoon mustard per burger). Place a lettuce leaf on the sauced bottom bun, then add one cheeseburger patty. Top with tomato slices, red onion slices, and pickle slices. Cap with the top bun.

Serve immediately while hot. Provide extra ketchup, mustard, or pickles on the side if desired.
