Prepare curds
If using large curds, cut them into bite-size pieces about 1 inch. Pat dry thoroughly with paper towels—dry curds help the batter and coating adhere and reduce splatter when frying. Keep curds chilled in the refrigerator until ready to coat.
Batter
Make dry mix
In a bowl, whisk together 3 tablespoons flour, 2 tablespoons cornstarch, 1 teaspoon baking powder, 1 teaspoon salt and 1/2 teaspoon black pepper until evenly combined.
Add wet ingredients
Whisk in 1 tablespoon vegetable oil and 3 tablespoons ice-cold beer or club soda into the dry mix to form a slightly thick, smooth batter. Batter should coat a spoon but still be fairly light. If too thick, add 1 teaspoon cold liquid; if too thin, add 1 teaspoon flour.
Chill batter briefly
Place batter in the refrigerator for 5–10 minutes to keep it cold; cold batter gives a crispier fried coating.
Coating & Frying
Set up dredging station
Arrange 1/2 cup flour in a shallow dish, beat 2 eggs with 2 tablespoons milk in another shallow bowl, and place 1 cup panko breadcrumbs in a third shallow dish.
Preheat oil
Pour about 3–4 cups vegetable oil into a heavy pot or deep fryer (enough for 2–3 inches depth). Heat oil to 350°F (175°C). Use a thermometer to maintain temperature; too hot will brown exterior before cheese melts, too cool will make greasy curds.
Dredge curds
Working in batches, lightly toss each dried curd in the 1/2 cup flour to coat, shake off excess, dip into the egg wash, then into the cold batter to coat. Immediately transfer to panko breadcrumbs and press crumbs gently so they adhere. For an extra-crispy double coating, return crumbed curd to the batter briefly and then back into the panko.
Fry
Carefully lower 6–8 coated curds (do not overcrowd) into the 350°F oil using a slotted spoon or spider. Fry for 1.5–2.5 minutes, turning occasionally, until golden brown and bubbly. If batter puffs, that's fine—ensure breadcrumbs are golden. Remove with a slotted spoon to a paper towel–lined tray.
Finish & season
While still hot, sprinkle finished curds with 1/2 teaspoon salt (adjust to taste). Let rest 1–2 minutes to allow cheese to become melty but not so long that it leaks out excessively.
Safety note
Serve immediately. Be cautious—molten cheese can cause burns. Allow first curd to cool slightly before sampling.
Optional Dipping Sauce
Whisk together 1/4 cup ketchup, 2 tablespoons mayonnaise, 1 teaspoon hot sauce and 1 teaspoon honey or maple syrup in a small bowl until smooth. Adjust seasoning to taste. Serve alongside hot cheese curds for dipping.
