Cook the Filling
In a large skillet over medium heat, add the ground beef and cook until browned. Add onions and garlic, and sauté until the onions are translucent. Stir in chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes until well combined.
Prepare the Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable. This helps prevent them from cracking when rolled.
Assemble the Enchiladas
Spoon about 1/4 cup of the beef mixture onto the center of each tortilla. Roll them tightly and place seam-side down in a greased baking dish.
Add Sauce and Cheese
Pour the enchilada sauce over the rolled tortillas, ensuring they are well covered. Sprinkle shredded cheese on top.
Bake
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.
Serve
Remove from the oven and let cool slightly before serving. Garnish with additional sauce, cheese, or toppings of your choice.
